Fried rice is an easy way to use up leftovers, so I make fried rice quite often. Fried rice has regional variation such as Chinese, Thai, Indonesian, Japanese and more. For this recipe I used fish sauce and Chinese dark soy sauce to make something between these countries' fried rice :-)

材料

3-4 servings
  1. cooked Jasmine rice 700 g
  2. ground beef/bison 1/2 lb
  3. shallot (thinly sliced) 1 large
  4. red bell pepper (chopped) 1 medium
  5. green bell pepper (chopped) 1 medium
  6. frozen peas 1/3 cup
  7. fresh Thai basil 1 cup
  8. garlic (minced) 3 cloves
  9. crushed red pepper 1/4 teaspoon
  10. canola oil 2 tablespoons
  11. for the seasoning:
  12. fish sauce 2 tablespoons
  13. Chinese dark soy sauce 1 tablespoon
  14. oyster sauce 2 teaspoons
  15. coconut palm sugar 1 tablespoon
  16. sea salt to taste
  17. ground white pepper to taste

作り方

    NOTE: If the leftover rice is cold, nuke it well.

    NOTE: 2-go Japanese rice cups yield 700 g of cooked rice.

    Oil in a stir fry pan over medium heat.

  4. 4

    Add garlic/red pepper, cook until the garlic gets fragrant.

  5. 5

    Add meat, break up the meat and cook until meat gets brown.

  6. 6

    Add shallots, bell pepper, and peas. Cook until wilted.

  7. 7

    Add warm rice and stir until everything is combined.

  8. 8

    Add fish sauce/soy sauce/oyster sauce/palm sugar.

    Mix well and make sure the rice is evenly coated with sauce.

    Taste, season with salt and pepper.

    Add basil and mix once more.

  12. 12

    Serve.

コツ・ポイント

I used Thai basil for this recipe, but you can use sweet basil or mint instead.
