Ingredients

Prep time -10 mins, Blending & Cooking time-25 min
2-3 servings
  1. 2medium size Beetroot
  2. 1/2 cupchickpeas boiled with 1/2 tsp baking soda and skin peeled
  3. 1 Tbsptahini paste
  4. 3/4garlic cloves
  5. 2 Tbspolive oil plus more to drizzle later
  6. 1/8 tspsalt
  7. 1 tspcayenne powder
  8. Garnish with boiled chickpeas and few coriander leaves, sesame seeds

Cooking Instructions

Prep time -10 mins, Blending & Cooking time-25 min

    Soak chickpeas 24 hrs and boil with 1/2 tsp baking soda for 6 whistles in pressure cooker, let it depressurise and discard the water and peel the skin, set aside

    Wash the Beetroot and roast in MW for 5 mins, set aside, peel the skin and add to blender. Make a purée

  3. 3

    Add the boiled chickpeas to the Beetroot, add cloves, tahini paste, olive oil, salt, cayenne powder and blend smooth

    Plate on a bowl and garnish with boiled chickpeas, olive oil and few coriander leaves, sesame seeds and enjoy as is or spread on sourdough bread
