Cooking Instructions

Soak the chickpeas overnight. The next day, rub them with baking soda and let them rest for 10 minutes. Rinse well, then place in a pot, cover with water, add a pinch of salt, and cook until tender.

In a blender, combine the cooked chickpeas, tahini, lemon juice, salt, and garlic. Blend until smooth. If the hummus is too thick, add some of the chickpea cooking water to reach your desired consistency.

Transfer the hummus to a serving dish. Use a spoon to make a well in the center. Drizzle with olive oil and garnish with a few whole chickpeas and a sprinkle of red pepper.
