Ingredients

1 ½ cups
  1. 1/2 CupGood Quality Extra Virgin Olive Oil
  2. Zest of 1 Whole Lemon
  3. 1/4 CupFresh Squeezed Lemon Juice, (From 1 ½ To 2 Lemons), More To Taste (Not Bottled)
  4. 1/4 CupSesame Seeds, Toasted
  5. 1 Can (15 Ounce)Garbanzo Beans (Also Called) Chickpeas, Drained, and Peeled
  6. Or 1 ½ Cup of Cooked Chickpeas
  7. 1Medium (1 Cup) Beetroot, Roasted & Peeled
  8. 1 head (4 Cloves)Roasted Garlic (2 Tsp)
  9. 1/2 TeaspoonSalt, More To Taste
  10. 1/8 TeaspoonsFreshly Ground Four Peppercorns, More or Less to Taste
  11. 1 TeaspoonGround Cumin
  12. 1/8 TeaspoonsSweet Paprika, More or Less to Taste, Optional

Cooking Instructions

  1. 1

    Combine all ingredients as listed in the container of a blender (I use Vitamix).

  2. 2

    Set the setting on the highest-speed and blend until very smooth.
    (It’s important to use very powerful blender to blend sesame seeds)

  3. 3

    Taste and adjust seasoning as needed (I like mine more lemony!)

  4. 4

    Topping: Drizzle with more olive oil, top with fresh chopped parsley or feta cheese.

  5. 5

    Serve: with warm toasted naan bread or pita bread. Enjoy!
