Cooking Instructions

Put all the ingredients, including the chicken, into a zip lock bag or freezer bag

Shake the bag until all the chicken pieces are coated
- 3
Pop into a fridge for 30 minutes to 1 hour. TIP: the longer you marinade, the better it tastes.

Remove the chicken pieces and place on parchment paper lined tray
- 5
In a preheated oven, cook the chicken at 200 degrees for 15 minutes and then turn them and cook for a further 10 minutes. Check largest piece is cooked through and return to the oven if necessary.

Take from the oven and serve with salad, dips and flat bread

So I cold smoked this fresh turkey outside on the barbecue. Came out perfectly done.Made 40 portions of sliced smoked meat and 11 cups of gravy. Freezes well.
