Baba ghanoush

Cooking Instructions
- 1
Prick the Aubergine all over using a fork. Apply some oil to it and place it directly on a gas stove until the skin blackens and inner flesh becomes soft. (You can also roast it in the oven with a pre-heated grill at 190 degrees F for about 40- 45 mins or till soft)
- 2
Try inserting a fork to test. It should penetrate and come out easily without any resistance.
- 3
Peel it and chop the flesh or press it with fork to mash it. Don’t make it smooth, it should retain aubergine texture.
- 4
Add chopped garlic, tahini, lemon juice, salt, olive oil and mix well.
- 5
Swirl little olive oil on top, sprinkle parsley and chili flakes.

Roasted Baba Ganoush Roasted Baba Ganoush
Playing around with a few roasted eggplant recipes, I decided to cook them face up first to get the skins soft. Then putting them face down on the baking sheet allows them to cook in their own juices, sort of an eggplant confit, if you will. The flavor is creamy and sweet. Be prepared to adjust the flavor as needed to accommodate the Maillard browning that happens. Time for more lemon juice! Jim Kennedy -
Falafel, Fried Chickpea Balls Falafel, Fried Chickpea Balls
FalafelFalafel is very popular in the Middle East and is served as fast food as well as a snack. These are balls made from chickpeas, though they can also be made with fava beans. They are usually served inside pita bread with a salad of lettuce, tomatoes, cucumbers, red bell peppers, spicy sauce, and drizzled with tahini or tzatziki sauce. They can also be served on their own with dipping sauces.Falafel has been part of Arab and Jewish diets for centuries.Traditionally, chickpeas are soaked overnight, drained, and then ground raw after softening in water.I prefer to use cooked chickpeas. Baba Ganoosh Baba Ganoosh
My boyfriend and I ate a late and glutinous lunch at Applebee's. ( one time a year treat). We both love baba ganoosh and compromised on an "easy Saturday night dinner of dips." Which of course turned into finding the perfect homemade eggplant dip and purchasing ingredients at the grocery store like black garlic and tahini-- "easy" but did not disappoint! Erin DeLizzio
