These days I am mostly cooking for one and so a whole cabbage in my veg box delivery can be a challenge. A recent pointy cabbage - crisp light green where leaves can be peeled off day by day- was a challenge. This is one recipe I perfected.

These days I am mostly cooking for one and so a whole cabbage in my veg box delivery can be a challenge. A recent pointy cabbage - crisp light green where leaves can be peeled off day by day- was a challenge. This is one recipe I perfected.
Cooking Instructions

Finely chop ginger, garlic and spring onions

Warm olive oil and / or butter in large frying pan or wok and add onions garlic, ginger and chilli. Cook gently on fairly low heat so as not to brown. I used a lid to keep moist

Thinly slice or chop cabbage leaves as you like and add to softened ingredients in pan.

Stir and turn to coat cabbage with oil and continue to fry gently.

It is not essential but I use low heat and cover after 5 minutes. If it seems to be drying and scorching (burnt cabbage not nice) add 1-2 tbs water or white wine.

This evening I served it with a piece of savoury chicken and potatoes. Tasty!
