Ingredients

  1. 2 cupQuinoa, cooked
  2. 2 largeeggs
  3. 1 cupShredded carrot
  4. 1/4 cupcilantro
  5. 1/2 cupparmesan cheese
  6. 2 tbspflour
  7. 1/2 tspsalt
  8. 1/4 tsppepper
  9. 2diced green onion
  10. 2garlic cloves, chopped

Cooking Instructions

    preheat oven to 350°F.

    mix all ingredients in a bowl.

    grease a mini muffin pan and fill to the top with quinoa mixture. bake for 15 - 20 minutes.
