I never throw out overripe bananas! This delicious bread is great for breakfast or dessert. I like to bring to brunch to serve a large group. It always gets rave reviews. Cut recipe in half and use a loafpan if you like.

Cooking Instructions

preheat oven to 350°.

grease 13x9 pan.

soften butter.
- 4
Mash bananas. mix wet ingredients and dry ingredients separately.

slowly blend wet and dry ingredients well. pour into greased 13x9. bake for 70 to 75 minutes or until a toothpick comes out clean. cool well before slicing.

this bread is so moist, you don't really need anything on it...but it sure is good with vanilla ice cream!

I had some bananas at home that were going bad, and had just gotten mangos and pineapples at the farmer's market that day, so I decided to make my own tropical version of banana bread, as I couldn't find a recipe I liked online. My hubby is diabetic, so I ended up tweaking a basic recipe I had found online by halving the amount of butter it called for, and adding coconut sugar (and less of it) for regular white sugar. Didn't have raisins, so I used prunes and added extra fruit..figured if my hubby ate this recipe, it would not only increase his fruit intake, but keep him regular too! LOL...You could probably add nuts if desired, but I didn't have any on hand. Enjoy!!rcantu1975
