Ingredients

4 servings
  1. 4boneless, skinless chicken breast
  2. 4 ozsoftened cream cheese
  3. 1 tbspchopped parsley
  4. 1 tbsponion , minced
  5. 2 tsplemon juice
  6. 1/4 cupflour
  7. 1/2 tspgarlic salt
  8. 1/4 tsppepper
  9. 1egg, beaten
  10. 1/2 cupcorn flake crumbs

Cooking Instructions

    Preheat oven to 350°

    place chicken breasts between sheets of wax paper & flatten to around 1/4 inch thick

    In a bowl, beat cream cheese, parsley, onion, garlic salt and pepper and lemon juice until blended

  4. 4

    Spoon 2 tablespoons of the cream cheese mixture on each piece of chicken

  5. 5

    Roll chicken. Coat rolls with flour, dip in egg mixture, then roll in corn flakes

  6. 6

    Drizzle some olive oil in a large skillet. Cook over medium heat. Make sure to brown on all sides

  7. 7

    Place chicken rolls in a baking dish. Bake for 30 minutes or until chicken is fork tender and juices run clear.

I made this tonight but I used Panko cause I didn’t have cornflakes. I also used onion powder instead of onion. It came out really tasty. I’d definitely make this again.
