Spinach Hummus

Made this for the SF meet and eat last Saturday! The garlic and cayenne pepper give it some heat. Do not let the green color turn you away, it is delicious!

Ingredients

  1. Spinach hummus
  2. 2 cupchickpeas cooked
  3. 2 1/2 cupfresh spinach packed
  4. 1/4 cupolive oil or more to taste and consistency
  5. 3 tbsptahini
  6. 1 tbsplemon juice
  7. 2 clovegarlic

Cooking Instructions

    Place all ingredients, but oil, in blender and blend to desired consistency. Spice additions: 1 pinch salt, cumin, oregano, cayenne pepper and black pepper.

    Slowly pour in olive oil until desired consistency.

    Sprinkle with cayenne pepper for garnish and serve with crunchy bread, pita chips, pretzels, or fresh veggies.

    Notes: Preparing chickpeas in advance.

    Soak dried chick peas in water over night covered, in refrigerator. Water slightly more than two times dried amount.

    Drain.

    Boil until tender (about 20 to 30 minutes.) and drain.

    Allow to cool.

    Store in airtight container. Great source of antioxidants and nutrients!

The end result tastes pretty good, but not as good as I expected. It starts out pretty runny too but does thicken up after sitting in the fridge overnight.
