I had some left over lamb and spinach from the lamb burger recipe and needed to make something that was quick. It only took until the noodles boiled and a few extra minutes to heat up the meat and spinach to cook!

This is a recipe from Bon Appetit, tweaked a bit. Most notably, I added sausage to please my carnivore daughter. I also cut the amount of lemon by half. I don't know if my lemon was just too big or too mature, but I found that the pith from using an entire lemon made the sauce a little too bitter. The end result of these changes was a dish that was both bright and summery, yet rich and filling.

Something that tastes like Fall. A little bit of sweetness from the butternut squash, a hint of spice from the sausage, a bit of cheesiness from the Parmesan on top, and a happy content stomach from all this pasta!

This recipe is rich, and filling. The topping is actually crispy and crunchy and has a nice textural contrast. It's worth while to have everything pre-prepped since this dish comes together quick. It was adapted from the recipe on Serious Eats
