Ingredients

  1. 1 packagesMedium shell pasta
  2. 1 eachLime, juice
  3. 1/2 tspSugar
  4. 1/2 tspKosher salt
  5. 2 cloveGarlic, minced
  6. 2 tbspCumin
  7. 1/2 eachRed onion, thinly sliced
  8. 1 eachJalapeno, seeded, and small diced
  9. 2 eachChicken breast, boneless, skinless, medium diced
  10. 1 eachRed pepper, roasted, peeled and seeded,small diced
  11. 1 eachYellow pepper, roasted, peeled and seeded and small diced
  12. 1/2 tspSalt and pepper to taste
  13. 4 tbspExtra virgin olive oil, divided
  14. 4 tbspCilantro, fresh chopped, divided

Cooking Instructions

    This can be made hot or served cold. Put sliced onion in cold water.

    Sprinkle diced chicken with cumin, mix well and set aside 5 min. Fry chicken in half of the oil. Remove chicken a set aside.

    With the pan of the chicken add peppers, garlic, and Jalapeno cook over low heat and scrape bits from pan until fragrant. Don't burn garlic.

    Cook pasta according to directions

    Add chicken back to pan with pepper mix. Add onion and keep warm.

    In a separate bowl, mix remaining oil, lime juice, salt, sugar, and cilantro.

    Once pasta is cooked, add it to chicken and peppers with a little of the pasta water to help loosen the remaining fond. Stir well.

    Place chicken and peppers into a large bowl and drizzle oil cilantro over chicken. Mix well and serve or chill and serve cold.

My guys tore it up! As usual, I added tumeric, paprika, extra garlic and extra cumin. I also added peas & used Coconut Oil instead of EVOO; I added a bit more than the recipe called for & omitted sugar. I only had Mexican Bowties, they worked great! New family favorite!! :ohyeaah
