This is a tart cobbler with a crust that's less like a biscuit and more like a cake. It's great with whipped cream or vanilla ice cream on top.

Ingredients

8 servings
  1. Filling
  2. 4 cupBlueberries
  3. 3/4 cupGranulated Sugar
  4. 1 tbspCornstarch
  5. 1 tbspLemon Juice
  6. 1/2 tspSalt
  7. Crust
  8. 1 cupAll-Purpose Flour
  9. 1/4 cupGranulated Sugar
  10. 1 tspBaking Powder
  11. 2/3 cupMilk
  12. 1Egg

Cooking Instructions

  1. 1

    Preheat oven to 350°F.

  2. 2

In a medium mixing bowl, mix all filling ingredients and transfer to ungreased baking dish. NOTE: I prefer cobblers very tart so I can taste the fruit, rather than the sugar. If you prefer yours sweeter, increase the sugar from 3/4 cup to between 1 and 2 cups.

  3. 3

In a medium mixing bowl, mix crust ingredients. Pour over the top of blueberries in baking dish.

  4. 4

Bake at 350°F for one hour.
