My aunt always made this dish for family get togethers and it's always been a huge hit! I was surprised to see cottage cheese was in this, but mixed with Italian spices and ricotta cheese, you can't even tell. Enjoy!

Ingredients

4 servings
  1. 2 canof chicken, or chicken breasts, cooked.
  2. 1Container of cottage cheese
  3. 1Container of ricotta cheese
  4. 1Garlic salt
  5. 1Mozzarella cheese, shredded.
  6. 1Manicotti shells
  7. 2 canof spaghetti sauce, any flavor
  8. 1Salt
  9. 1Pepper
  10. 1Parsley flakes

Cooking Instructions

    Combine ricotta cheese, cottage cheese, parsley flakes, garlic salt, salt, pepper, and chicken.

    Stuff UNCOOKED manicotti shells with cheese and chicken mixture. Place in sauced dish.

    Set oven at 375°F. Pour 1 can spaghetti sauce into bottom of ungreased glass baking dish.

    Cover manicotti with 2nd can of spaghetti sauce. Put into oven for 45 mins.

    After 45 mins, take dish out, and sprinkle mozzarella cheese over top. Place back into oven for another 15 mins.

    All done! Check for noodles to be soft and cheese melted, if not browned a tad. Lovely chicken manicotti! Serve with wine of your choice for an Italiano feel :)
