Buffalo chicken loaded baked potato casserole

My awesome uncle from Philly posted this on Facebook and when I first read it, it seemed completely but when I started to make it was a lot easier than I thought. And amazingly good, and I really don't like the buffalo flavor. I did change one thing from the original version, it called for a full tablespoon of black pepper and as you can see I did change that and I believe it gave a better flavor. You can really taste the food with the spice.

Ingredients

  1. 2 lbchicken breasts
  2. 8 mediumpotato, peeled and cubed
  3. 1/4 cupolive oil
  4. 1 1/2 tspsalt
  5. 1 1/2 tspblack pepper
  6. 1 tbsppaprika
  7. 1 tbspgarlic powder
  8. 6 tbsphot sauce
  9. 1 cupdiced green onion
  10. 2 cupfiesta blend cheese
  11. 1 cupcooked bacon

Cooking Instructions

    Preheat oven to 500° and spray 9 x13 baking dish.

    In a large bowl mix Olive oil, salt, pepper, paprika, garlic, & hot sauce.

    Cook potatoes in baking dish for 40 to 50 minutes stirring every 10 to 15 minutes. May need to add more nonstick to keep potatoes from sticking.

    Mix cubed chicken into bowl with hot sauce mix.

  5. 5

    Once potatoes are cooked reduced heat to 400°, then add in chicken and sauce to potatoes and bake for another 15 minutes.

    Once chicken is cooked top with bacon, green onions, and cheese. Place bake in oven till cheese is melted.

    Serve with either ranch dressing,or extra hot sauce. Or it can be served all on its own.

Really good I loved it and super easy. I use small red potatoes cut them and cooked it with the skin. yummy
