In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.

Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.

Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans. Or you can free style it without loaf pans.

Bake at 350°F (175 degrees C) for 30 minutes.

After a very long hunt I finally found the perfect fluffy bread recipe from a friend and tweaked it to makes my own. I used semolina to really add flavor. I can tell when it's been left out. Also the wheat protein is crucial to the light and fluffy texture. You can get bread flour and leave it out since that's what bread flour is. I just don't like storing different plain flour.

Nana's Old-fashioned White Bread
When treated gently this bread is light and airy, but always packed full of flavor. Even if you get a "reject loaf" (aka one that falls while baking) it is still delicious.I don't use shortening in any of my own recipes, but if my Nana used shortening in hers I do not deviate for flavor authenticity and nostalgia purposes. I do use a "modernized method" to make mine because having carpal tunnel makes it difficult and painful to stir and work with thick doughs like this.

I baked my usual white bread in a ring shaped pan since I like larger sized bread better than small sized ones.The dough is rather sticky so dust with flour when working with it.If you want to make a pure white bread, cover with aluminum foil when you lower the temperature.
