Buffalo cauliflower wings with blue cheese dip

My husband is obsessed with chicken wings, but as we are trying to reduce our meat consumption this has been difficult to replace. But then I found this recipe online and was inspired to give it a try. With a few little tweaks this is my version of the recipe on gimmedelicious.com.
These went down seriously well, the texture is spot on and tasted nothing like cauliflower!! Win!

Ingredients

1 hour
2 as a side,
  1. 1whole cauliflower
  2. 100 gplain flour
  3. 2 tspgarlic granules or powder
  4. 1 tsppaprika
  5. 1 tspcumin
  6. 1/4 tspsalt
  7. 1/4 tsppepper
  8. 120 mlmilk
  9. 60 mlwater
  10. 250 mlbuffalo sauce (we bought Meat Lust Buffalo Sauce)
  11. 75 mlsoured cream
  12. 75 gblue cheese (saint agur, roquefort or similar)
  13. 2garlic cloves
  14. Juice of half a lemon
  15. 2 tbspmayonnaise

Cooking Instructions

    Preheat oven to 220 degrees

    Wash and cut cauliflower into florets

  3. 3

    Add flour, spices and seasoning into a medium mixing bowl. Slowly add milk to make a roux. Add remaining water and milk to form a thick batter

    Dip florets one at a time into the batter shaking off the excess. Place onto a lined baking tray. (Try to avoid any excess batter pooling on the tray as this makes it difficult to turn)

    Bake in the oven for twenty minutes turning once

    Meanwhile make the dip. Combine sour cream, blue cheese, mayonnaise, garlic and lemon juice in food processor and season well

    After twenty minutes remove the cauliflower from the oven and place in a mixing bowl.

    Pour over buffalo sauce and mix well to ensure an even coating. I added a little extra water to the sauce to reduce the thickness.

    Place back on baking tray and return to the oven for another 20-25 minutes turning once.

    Once golden and crispy remove from the oven and serve with dip
