Lemon Glazed Zucchini Bread

Ingredients

  1. for the bread:
  2. 2 cupall purpose flour
  3. 1/4 tspsalt
  4. 2 tspbaking powder
  5. 2 largeeggs
  6. 1/2 cupcanola oil
  7. 1 1/3 cupgranulated sugar
  8. 2 tbsplemon juice (fresh squeezed is best)
  9. 1/2 cup1% milk (any milk will do)
  10. 1 tsplemon zest ( fresh is best)
  11. 1 cupgrated zucchini (no seeds)
  12. for the glaze:
  13. 1 cuppowdered sugar
  14. 1 tbsplemon juice (fresh squeezed is best)
  15. 2 tbsp1% milk (any milk will do)

Cooking Instructions

    Preheat oven to 350°F

  2. 2

    Spray or grease 1 large loaf pan. Set aside.

  3. 3

    In a medium bowl sift or wisk together flour, baking powder and salt. Set aside.

    In a large bowl beat eggs.

  5. 5

    Add oil and sugar. Wisk until well blended.

  6. 6

    Add lemon juice, milk, lemon zest and wisk together.

  7. 7

    Stir in zucchini.

  8. 8

    Add dry to wet and stir until it is well combined. Try not to over mix though.

  9. 9

    Pour batter into loaf pan.

  10. 10

    Bake for about an hour or until toothpick inserted into center comes out clean.

    Remove from oven. Let cool enough to where you can handle it. Run a butterknife along edges and turn out onto a serving dish.

    Now make the glaze by mixing all the glaze ingredients in a bowl.

    Drizzle your glaze over the entire loaf.

    Let cool or serve warm. Enjoy!

    Note: if your zucchini is very wet or really moist you need to squeeze out the liquid.
