BP's N'Orleans Shrimp n Grits

  1. for the shrimp
  2. 1 lblarge shrimp, peeled, deveined
  3. 1 lbAndouille Sausage, sliced on the diagonal 1/2 inch
  4. 1 tbspcreole seasoning
  5. 1 tbspgarlic powder
  6. 1 tbsponion powder
  7. 2 tspblack pepper
  8. 1 tspdried thyme
  9. 1 tspsmoked paprika
  10. 1/2 stickstick of butter
  11. 2 tbspextra virgin olive oil
  12. 2stalks celery, chopped
  13. 1jalapeno, diced
  14. 1bell pepper, diced
  15. 1small red onion, diced
  16. 3 clovegarlic, minced
  17. for the grits
  18. 1 cupgrits
  19. 1 cupwater
  20. 1 cupmilk
  21. 1 cupbeef or chicken broth, low sodium + extra to thin grits as they cook
  22. 1 stickbutter
  23. 1 1/2 cupgrated sharp cheddar cheese
  24. 1 tspCreole seasoning
  25. 1 tspblk pepper
  26. 1 tspgarlic powder
  27. 1 tsponion powder

Cooking Instructions

    In a large pot bring all liquids to boil, add butter and seasonings

  2. 2

    Slowly stir in grits while whisking nonstop for about two minutes.

    Reduce heat to low and cook grits, stirring occasionally for about 20 minutes.

    Adding extra broth as needed to keep the grits thin. Add cheese and whisk well, add more broth if needed.

    To prepare the shrimp, peel and devein shrimp, season with all the spices and set aside.

    In a large saute pan add butter and olive oil over medium high heat, add all the vegetables, except garlic and saute for 5 minutes, add garlic and saute 1 minute more.

    Add andouille sausage and saute about 10-15 minutes, until browned. Add shrimp and cook about 3-4 minutes are until no longer pink.

    Serve on top of hot grits...yes sir!
