Ingredients

  1. 2 tbspOil
  2. 1 lbSmoked sausage, sliced
  3. 1 eachGreen bell pepper, diced
  4. 1 eachRed bell pepper, diced
  5. 1 smallOnion, diced
  6. 2 cupBeef or chicken stock
  7. 1 canDiced tomatoes
  8. 1 cupWater
  9. 2 cupWhite rice, dry measure (not instant rice)
  10. 1 tbspSmoked paprika
  11. 2 tbspCajun seasoning blend
  12. 1/2 tspRed pepper flakes (optional)
  13. 1/2 tspSalt

Cooking Instructions

    Heat oil in a large skillet over medium high heat.

    Add peppers, onions, and sausage. Stir and cook about 5 minutes.

  3. 3

    Add spices and rice. Stir well and cook another 2 minutes.

  4. 4

    Add tomatoes, broth and water. Bring to a rapid boil.

  5. 5

    Reduce heat to medium low. Cover and let cook about 20 minutes or until rice is tender and most of the liquid is absorbed.

    Eat as is or top with cheese and sour cream.
