I cook this for my family at least once a week. It’s easy and delicious and cooks in one pot so clean up is a breeze.

Ingredients

45 minutes with prep work.
4 people
  1. 2table spoons of Extra Virgin olive oil
  2. Red onion
  3. Green bell pepper
  4. 3 clovesgarlic
  5. 1 cuprice
  6. 2 cupschicken broth
  7. Salt and pepper to taste
  8. 1 Teaspoonbutter
  9. Italian sausage
  10. Zucchini
  11. Italian seasoning

    All ingredients needed.

    Do all of your prep work ahead of time to make cooking easier. Dice up your onion, bell pepper, zucchini, and chop up your garlic. I like to keep larger pieces for a heartier dish. Also remove the casing from your Italian sausage.

    Heat your oil in a large pan or pot with a lid

    Sauté you onion and bell pepper on medium heat until onion is translucent. (About 5 minutes)

    Next throw in your zucchini and garlic and heat and addional 2 minutes

    Add in your Italian seasonings, salt, and pepper

    Make a well in the center of your pan and crumble your sausage in the center. Crank the heat to high to brown your sausage and continue to sauté the vegetables and not boil them.

    Make another well and add your rice in and sear it for about 30 seconds to a minute stirring so it doesn’t burn

    Add your chicken broth and butter. Then bring to a boil

    Once boiling reduce heat to a simmer and cover for 25 minutes making sure not to remove the lid and release the steam.

    Uncover and serve
