Spinach and Mushrooms

I made this as a small side dish to go with chicken. I had some mushrooms that needed using up and some spinach that had been in the freezer for a while. so I came up with this dish. Had a nice balance of flavours I would suggest adjusting the vinegar to how strong you want it to be.

Ingredients

2 servings
  1. 150 gramsclosed cup mushrooms, cut in half
  2. garlic salt
  3. cracked black pepper
  4. 2 tbspwhite wine vinegar
  5. 3 tbspolive oil, extra virgin, I used left over oil I'd previously fried chicken.
  6. 150 gramsfrozen spinach
  7. 1 mediumred onion, sliced
  8. 4garlic cloves, sliced

Cooking Instructions

    Heat the oil over a medium heat.

    Add in the garlic and onion and fry until softened. About 2-3 minutes.

    Add in the spinach and mushroom and fry for 5-10 minutes. Continue stirring throughout.

  4. 4

    Add in the salt and pepper. Then add in the vinegar.

  5. 5

    Fry for a further 5 or so minutes.

  6. 6

    And enjoy.
