Ingredients

30 mins
4 servings
  1. 2 tbspoil
  2. 1large onion, chopped
  3. 4chicken breasts, cut into bitesize chunks
  4. 1 tbsp(or 2!) medium curry powder
  5. to tastesalt & pepper
  6. 1large red bell pepper, sliced
  7. 200 gramsbasmati rice
  8. 500 mlhot chicken stock
  9. 2 tbspfreshly chopped parsley

Cooking Instructions

    Heat the oil in a large pan with a lid. Fry off the onion until softened

  2. 2

    Sprinkle the diced chicken with the curry powder and some salt & pepper

  3. 3

    Add it to the onion and brown, around 10 minutes

  4. 4

    Add the sliced red pepper, rice and stock. Bring to the boil, cover and let simmer for 15 minutes or until the rice is tender and has absorbed the stock

  5. 5

    Stir in the chopped parsley before serving
