Easy Za’atar Chicken with Chickpeas

A simple but delicious dish cooked using the Middle Eastern seasoning Za’atar, served with chickpeas and a tasty garlic yogurt 😍

Inspired by my girlfriends amazing Lebanese cooking, I’m desperately trying to recreate the experiences using my own, less-developed cooking skills 😅🇱🇧

For the authentic experience, look for za’atar made from dried hyssop leaves. It’s not as common but you should be able to find it at specialist local shops 🍃

Ingredients

4-8 servings
  1. 3 tbspza’atar seasoning
  2. 6 tbspolive oil
  3. 8chicken thighs on the bone
  4. 6garlic cloves
  5. 2 canschickpeas
  6. 250 ggreek style yogurt (thick)
  7. 1 pinchrock salt

Cooking Instructions

    Preheat the oven to 220c/200c fan

  2. 2

    Mix the za’atar in a small bowl with the olive oil

  3. 3

    Prepare the garlic by peeling it then drain and rinse the chickpeas

  4. 4

    Place the chicken into a roasting tray, apply the za’atar mix then add the chickpeas and garlic

  5. 5

    Place in the oven for 30 minutes

  6. 6

    Take the tray out of the oven, remove the garlic (keeping hold of it) and brush the chicken with the juices in the tray.

    Place back in the oven for a further 15 minutes

    While you wait, make the garlic yogurt by crushing the roast garlic on a chopping board with the side of a knife.

    Continuing with the side of the knife, turn the garlic into a paste by spreading it across the chopping board with some pressure.
    Add some rock salt to help with this

    Then add the garlic paste to the yogurt and mix well

  10. 10

    Remove the tray from the oven and check the chicken is cooked properly

    Serve the chicken alongside the chickpeas and yoghurt, enjoy!
