Baingan aloo masala (brinjal potato masala)

Ingredients

4 servings
  1. 2 medium sized potatoes (cut into long pieces)
  2. 2Baigan (cut into long pieces)
  3. 1/2 cup peanuts
  4. 1" ginger piece
  5. 8-9 clovesgarlic
  6. 5-6Green chillies
  7. 1/2 tspturmeric powder
  8. to tasteSalt
  9. as neededOil for deep fry
  10. 1 pinchfenugreek seeds
  11. 2tomatoes rougly chopped
  12. 1 tspgaram masala
  13. 1 tbsp fresh coriander chopped

Cooking Instructions

    Firstly heat oil in a pan and deep fry potatoes and baingan untill it become soft. Keep it aside.

    Now make a smooth paste with tomatoes, ginger, garlic, green chillies, fenugreek, peanuts.

    Now in a same pan heat 2 tblspn oil and put this paste into it.

    Cook for 5 minutes then add aloo baingan, salt and some water, as according you want consistency of gravy, and cook for 7 to 10 minutes.

    Add garam masala and turn off the flame.

    Aloo baingan masala is ready. Garnish with fresh coriander.
