Delicious warm or cold, on its own or with a hot drink, with custard, ice cream or pouring cream!
Cooking Instructions

Preheat oven to 160C or 140C for fan assisted.

Lightly grease the cake tin.

Peel and core the apple, and slice thickly.

Measure out the dry ingredients into a large mixing bowl, and then follow with wet ingredients.

Mix together well until mostly blended (don’t over mix) and then beat with electric hand mixer for roughly 1 minute.

Spread half the mixture evenly into the bottom of the tin, and then layer the apple slices on top, going around the tin.

Start with one layer from the outside first, and then pile the rest towards the centre. You want to end up with 2/3 of the slices in the middle of the cake.

Gently scoop the rest of the batter onto the central pile of apples, spreading carefully so that it covers most of the middle of the cake, quite thickly. Do not worry about covering up to the sides as it will spread in the oven. Sprinkle the almond flakes evenly all over the top.

Cook in the centre of the oven for 1hr 15mins - 1hr 30mins, until a skewer comes out clean, the top is golden and the sides are JUST starting to pull away from the tin.

Leave to cool in the tin until just warm, then remove carefully (the sides or base may need to be gently separated from the tin using a knife), dust with icing sugar, and serve with whatever you like. Can be frozen once cooled completely.

I am not a cake person. I would trade a red velvet cheesecake for a cookie anytime. I somehow dislike the light airy sponginess. So, when it comes to the cakes that I would eat are those that are dense, fudgy or custardy. More like a brownie or a parisian flan consistency. For this Thanksgiving special, I decided to make a simple French apple cake.Call me weird, but I am that type of person who adore very simple cakes without all the fancy frosting or decorations. Don't get me wrong tho. I do admire cakes with excellent frosting art. I love how this cake draws natural flavors from the apples. It is custardy, not too overly sweet and the apples add a nice crunch.I am using a mixture of apples; gala and granny smith. Granny smith tends to be on the tart side and while this cake depends entirely on the apples for flavors, I would highly recommend use a sweeter red apple in the mix. Gala is a great choice. I decided not to peel the Gala apples cos I like the contrast between peeled and unpeeled. I am also using a mixture of sugar. Again, contrast between granulated and dark muscovado sugar. I decided to serve my apple cake with apricot compote, vanilla bean ice cream and a drizzle of beurre noisette. Beurre noisette is actually browned butter. I think we should get started with the recipe instead of me talking too much. Daniel Lim -
