Curried chicken, sprouts and chickpeas with honey lemon yogurt

I had some #seasonsupply sprouts and no idea what to make with them. A friend shared a tamarind sprout recipe, but I couldn’t find tamarind so I improvised. I love this creation!

Ingredients

  1. 6chicken thigh fillets
  2. 250 gBrussel sprouts
  3. 6shallots
  4. 1 tinchickpeas
  5. Handfulpistachios
  6. 1/2lemon
  7. Drizzle olive oil
  8. Spice mix
  9. 1 tspcumin
  10. 1 tspchilli powder
  11. 1 tspmild curry powder
  12. Yogurt dressing
  13. 6 tbspyogurt
  14. 1 tsphoney
  15. 1/2lemon juiced

Cooking Instructions

    Preheat the oven to 180c

    Cut the sprouts in half and the shallots into slices. Place in a roasting tin

  3. 3

    Drain and rinse the chickpeas. Place in the tray along with the chicken.

    Toss the spice mix together along with the ingredients in the tray with some olive oil.

  5. 5

    Roast for 20mins till golden. Squeeze over the lemon juice, sprinkle with pistachios and return to the oven for 5mins

    Mix together the yogurt, honey and lemon juice to make a dressing.

    Serve the chicken topped with the yogurt dressing. 😋
