    First,cut the cowtail into pieces and rinse with clean water, then place inside pot. Pour four cups of water,peel 1 clove of garlic and grind it then put it inside. Sprinkle 1 teas poon of thyme,cut onions and put inside,cover the pot and place the pot on a cooking stove and leave it to cook for 30 minutes.

    After 30 minutes, open the pot and check. When it is soft, grind scotch bonnet and red pepper and put inside the pot. Add curry powder and seasoning to taste. Lower the stove and leave it to simmer for 10 minutes. Take it off the pot and serve.
