Tortellini with a Creamy Tomato Basil Sauce

This is my twist on a recipe I came across on Pinterest. It's a quick and tasty dinner idea for when your feeling more indulgent. It's also delicious with some fresh spinach wilted in or crumbled cooked Italian sausage. Goes great with a simple salad and some breadsticks for dipping.

Ingredients

  1. 20 oz.package of tortellini, any flavor you'd like
  2. 3 tbsp.butter
  3. 1/2small yellow onion, diced
  4. 2 clovesgarlic, minced
  5. 3 tbsp.all purpose flour
  6. 1 cupmilk
  7. 1/2 cupheavy whipping cream
  8. 1 can (14 oz.)unsalted diced tomatoes, undrained
  9. 3 tbsp.fresh basil, chopped finely (or 1 1/2 tsp. dried basil)
  10. 1/2 tsp.pepper
  11. 1/4 tsp.salt
  12. 1/2 cupfreshly grated parmesan cheese (plus more for topping)

    Get a large pot of salted water going over high heat for the tortellini. Once it comes to a boil, stir in the tortellini and cook according to the package directions. Meanwhile, in a seperate pot, get the sauce going.

    In a seperate, medium sized pot, heat the butter over medium heat. Once it's melted, add the onion and cook for 2-3 minutes, so it can start to soften up. Then stir in the garlic and cook an additional 2 or so minutes, stirring often.

    Add the flour and whisk until it is all incorporated with the butter. Let this cook for a minute or so, stirring often.

    Slowly whisk in the milk and cream until it is all added and smoothly incorporated. Increase the heat to med-high, then add the diced tomatoes, basil, salt and pepper. Let this come to a gentle simmer.

    Once at a simmer, reduce the heat slightly and allow this to simmer for about 5 or so minutes, until it has thickened up. Then remove it from the heat and immediately stir in the parmesan cheese.

    By now, your tortellini should be done and drained. Stir the cooked tortellini into the sauce and stir it all together. That's it! Serve topped with some additional freshly grated parmesan cheese.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
