Pumpkin is a vegetable which is full of health benefits and can be used in many different ways. Today I have tried making rabdi out of it and it turned out absolutely delicious.

First of all add ghee in a pan and when it is a bit warm, add grated pumpkin to it and mix it well. Cook pumpkin on medium heat for 4 - 5 min until the raw smell goes and it changes the colour.

Now add milk into it and cook it until the milk is absorbed completely. Now add milk powder to it and cook it for 5 minutes. Add condensed milk to it and again cook it on medium heat for 10 to 15 minutes until everything comes together. you can increase or decrease the quantity of condensed milk according to your preference. Even the consistency can be kept according to personal choice.

Now add saffron along with mixed dry fruits to it and mix everything well. Turn off the heat and let it cool down at room temperature.

Serve pumpkin rabdi warm or chilled along with a meal or as a dessert.
