Ingredients

  1. 1 Cuptamarind seedless
  2. 1 cupdates
  3. 1 cupjaggery
  4. 1 tspkashmiri red chilli powder
  5. 1/2 tspfennel seeds powder
  6. 1/4 tsproasted cumin seeds powder
  7. to taste black salt
  8. to taste common salt
  9. 1/8 tspgaram masala powder
  10. 2 pinchdry ginger powder
  11. as neededWater

Cooking Instructions

    First soak the dates in hot water for at least half n hour, deeseed the dates and blend them to make fine paste in blender jar.

    Soak the tamarind in hot water for at least an hour. squeeze the pulp from the tamarind in the same bowl or pan using hands, strain the pulp and keep aside.

    Now add jaggery and 1/2 cup of water and cook to make syrup.

    Now add dates paste, Tamarind pulp and all spices. mix well and let it simmer for 4-5 minutes or until you get desired consistency. Switch off the flame and let it cool completely.

    Transfer the prepared khajoor imli chutney into airtight jar and store it in the refrigerator.

For Date Tamarind Chutney, you have suggested 1/2 cup of fennel seed powder for 1 cup of tamarind and 1 cup of dates. 1/2 cup of fennel seed powder, to me, looks a bit too much. could you confirm. thx
