Ingredients

  1. 1 CupBoiled Noodles
  2. 3 tbspCornflour
  3. 2 tbspGinger Garlic Chilli Paste
  4. 1/4 CupSpring Onion Whites Finely Chopped
  5. 1Carrot finely Chopped
  6. 1/2Cabbage finely Chopped
  7. 1/4 CupBeans finely Chopped
  8. 5-6Mushroom finely Chopped
  9. to tasteSalt
  10. 1 tspblack pepper Powder
  11. 1 tbspVinegar
  12. 2 tbspsoya sauce
  13. 1 tspsugar
  14. 2 litrewater/ veg stock
  15. 1maggi veg stock cube
  16. 2 tspSpring onion greens for garnish

Cooking Instructions

    Take boiled noodles and add cornflour in it. Give it a good mix and then deep fry them in circles until crisp. Keep aside for later use.

    In a pan add 2 tbsp oil, ginger garlic chilli paste and saute for a min. Then add spring onion whites and again saute for a min.

    Then add all the finely chopped veggies, salt, sugar, vinegar, black pepper and soy sauce. Saute for a min or two.

    Then add water and veg stock cube. Let 2 to 3 boils come.

  5. 5

    Add the slurry of 3 tbsp cornflour and 2 tbsp water in it and cook until soup becomes thick. Garnish with spring onion greens and green coriander.

    Serve in a bowl and garnish with fried noodle circles.
