Dal bati is a popular dish in Rajasthan. Dal is prepared using tuar dal, moong dal, chana dal, masoor dal and urad dal. I have taken the above dals to make the delicious dal of Dal-Bati. Batis are prepared from whole wheat flour and semolina usually.

  1. For Dal
  2. 1/4 cup- Yellow Moong Dal
  3. 1/4 cupChana Dal
  4. 1/4 cupMasoor Dal
  5. 1/4 cupTuvar Dal
  6. 2 tbspUrad Dal
  7. 1/2 tbspghee
  8. 1/4 tspgaram masala
  9. 1/4 tspturmeric powder
  10. 1/4 tspcoriander powder
  11. 1bay leaf
  12. 1/2 cupchopped onion
  13. 1 cupchopped tomatoes
  14. 1 tspminced garlic
  15. 1 tspgrated ginger
  16. 1green chilli chopped
  17. 2 tbspgreen coriander
  18. For tempering
  19. 1 tbspghee
  20. 1/3 tspmustard seeds
  21. 1/2 tspcumin seeds
  22. 1 pinchasafoetida
  23. 1/3 tspcinnamon powder
  24. 2curry leaves
  25. 1/3 tspKashmiri Red Chili Powder
  26. 1dry red chilli
  27. For Bati
  28. 1 cupwhole wheat flour
  29. 1/4 cupsemolina
  30. 3 tbspmelted ghee
  31. 1/2 tspsalt
  32. 2 tbspmilk
  33. as requiredWater to knead

Cooking Instructions

    Wash and rinse dals. In a pressure cooker, heat ghee. Fry onion, ginger, garlic and green chilli for 2 minutes. Then, add chopped tomatoes, salt, turmeric and all dry masalas.

    Add 3 cups of water and soaked dals. Pressure cooker for 3-4 whistle. Keep to cool down.

    In a tadka pan, heat ghee. Add cumin, mustard seeds, hing, red chilli powder and dry red chillies. Saute for a few minutes, then add the tadka to the cooked soft dals.

    To make Bati, add the ghee and salt to flour and semolina. Make like crumbs with your palm. Then, add milk and the required amount of water to make a tight dough. Divide the dough to balls. Press at the centre lightly.

    Heat 1 tsp ghee in a pressure cooker. Keep the flame low. Add the Bati balls. Cook with pressure cooker cover without rubber and lid. It will take 7-8 minutes to cook the Batis.

    Serve Bati with mixed dal, papad, ghee, chopped onions and green chillies.
