Cooking Instructions

Whisk together ingredients in a small saucepan and bring to a boil.

Reduce to a simmer and whisk occasionally for about 8 to 10 minutes.

Enjoy hot or at room temperature.

There are many recipes out there for brown sugar and ginger, but I wanted to make a version that was as concentrated as possible easily. I used to make this the "even easier" way, but ever since I encountered Cookpad user La Land's brown sugar syrup I've been adding mizuame to mine too. This is how I've been making this several times since last year.The amount of brown sugar that will melt in the juices that come out of the ginger is limited. If you use the "easier" method in particular, the lower the humidity the harder it is for the sugar to melt. They used to make caramel with and without water and/or vanilla depending on how it was to be used, but I use this method.I use a cream with 42% fat content, but 35% and 47% are OK too.Be sure not to stir the pan from the time you put it on the heat until the sugar starts to brown. I really like brown sugar, so made this recipe. My favorite way to eat it is with vanilla ice cream. I make this almost everyday!The brown sugar agar is less sweet than the agar jelly and ice cream.I prefer soft agar, (3 cups of water for 1 packet of agar), but my daughter prefers firmer agar, so the recipe written here lists a compromised amount.
