It's one of the popular Salad of the Middle East countries!
Fattoush is a Levantine Salad popular in UAE and the neighbouring Middle East / Gulf countries which is made from toasted or fried stale Khobus / pita bread pieces combined with mixed veggies and seasoned with a salad dressing made of Extra Virgin Olive oil, Pomegranate molasses which gives sweet taste and Sumac a kind of berry powder found in this region which gives sour taste to the salad and other ingredients.
Fattoush belongs to the family of dishes called Fattat which uses stale flat bread as a base.
Here I have used Whole-wheat flour Brown Pita.
Note: If you don't get pomegranate molasses and Sumac use Tamarind Sweet and Sour Chutney, it will work

Ingredients

40 -50 minutes
2-3 servings
  1. 1Pita Bread or Khabz / Flatbread or Croutons
  2. 1-2 TbspsOlive oil (EVO)
  3. Vegetables
  4. as neededFew Romain Lettuce leaves as needed torn or Chopped roughly
  5. 4Red Radish diced or sliced round
  6. 1small onion diced, petals seperated
  7. 1Small tomato chopped chunky
  8. 1Cucumber peeled, deseeded and chopped chunky
  9. 2 TbspsAbout Chopped Mint leaves
  10. 2 TbspsAbout of Parsley Chopped
  11. Salad Dressing
  12. 2 Tbspsextra virgin olive oil
  13. 3tsps / 1 tbsp Pomegranate Molasses / Sauce
  14. 2-3 tbsp Sumac
  15. As neededJuice of Half a medium sized lime (optional)
  16. as per tasteSalt
  17. 1/4 tspFreshly Crushed Black Peppercorns
  18. 1/8 TspCinnamon powder

Cooking Instructions

40 -50 minutes
  1. 1

    First of all take olive oil in a pan. Roughly tear the bread into pieces and add into it and toast on low flame till it's crispy. Then keep it aside to cool. Meanwhile prepare the vegetables as listed above. In a bowl / glass mix in all the ingredients of Salad Dressing, adjust salt, Pomegranate molasses sweetness and sumac sourness as per taste apart from the measurement mentioned above.

    Put all ingredients in a bowl and add in the salad dressing too and mix well. Finally once again check the salt, sweetness and sourness and adjust accordingly. Serve fresh otherwise the crispy pita will become soggy.
    If not serving immediately make vegetables and salad dressing ready and keep in fridge, when ready to serve mix in everything.
