Spring Onion Subji / Khariyu

Everyone enjoys eating fresh green vegetables during winter. These days we do get all the vegetables throughout the year but to have them fresh in winter is a pure delight. Vegetables even taste better during its season. There are so many dishes which we really like preparing during winter season only. Spring onion subji or khariyu is one of these special dishes which are enjoyed as a side dish. It can even be served along with roti as a subji.
Cooking Instructions

First of all clean and wash spring onion and let it dry. Now chop the white part roughly and cut the green part into 1inch pieces.

Heat oil in a pan and add cumin and hing to it. When it browns, add spring onion to it. Now add turmeric, red chilli powder, coriander cumin powder and salt to it and mix everything well.

Cook it on high heat for 3 to 4 minutes and turn off the heat. Do not cook it for longer as it tastes better when it is a bit crunchy.

Spring onion subji or khariyu can be served as a side dish. It tastes delicious served with roti or khichdi and kadhi.
