Sev / Shev is such an unmissable part of Diwali that it has to be made and eaten during Diwali. In my childhood , my grandmother used to make it piping hot on Diwali morning and it made the whole day extra special! The tradition continues as I too prepare it every Diwali. Made from gram flour, spices , dough is pressed in vermicelli like threads in hot oil with a special press , and fried to golden brown to hot crispy Shev as it is called. Loved by all, all year around!

Ingredients

30 minutes
6 to 7 servings
  1. 3 cupBesan or gram flour
  2. 3 tablespoonsRice flour
  3. 3 tablespoonsHot vegetable oil
  4. 1.5 tspSalt
  5. 2 tspChilli powder
  6. 1 tspTurmeric powder
  7. 1/4 tspHing
  8. as neededVegetable Oil to fry
  9. as requiredWater to bind dough

Cooking Instructions

    First, keep the oil to heat on low flame in a thick based kadhai.

    Sieve besan and rice flour in a bowl. Add the spices and salt and mix well. Then pour hot oil and mix well with a spoon for 2 minutes.

    Then using very small amount of water, bind to a tight dough.

    Then cover for 5 minutes. Then grease the shev press with oil and attach the perforated disc at the base.

    Then press a doughball in it close the lid. And move the handle in circular motion to allow the strings of dough to drop in hot oil. ( Check oil temperature by dropping a small piece, if it comes up it is sufficiently hot.

    Then let it turn on golden on both sides. Fry with a perforated spoon. Then remove on a kitchen tissue to absorb the oil. Repeat the process for remaining dough too. Cool on kitchen tissue towel. Then store in an airtight container.

    Enjoy delicious crunchy shev and have a happy diwali.
