Spring onion soup

Super simple recipe yet so delicious, made out of very few ingredients, goes perfectly well with sourdough bread.

Can be an easy addition if you are planning for an European spread for the evening.

Ingredients

  1. 10/12bulbs of spring onion
  2. 3 tspButter
  3. 1/4 tspblack pepper
  4. Salt
  5. 1/4 tsplemon juice
  6. Pinchcrushed oregano

Cooking Instructions

    Chop the onion bulbs of the spring onion greens. Clean those multiple times with water.

  2. 2

    Chop the bulbs into roundels. Add butter to pan, one hot, drop the onion and sauté.

  3. 3

    Into this add ground black pepper and salt, 2 cups of water. Let this simmer till onions are cooked, takes 4/5 mins.

    Soup is almost ready, sprinkle with crushed oregano and serve hot with bread or as it is.
