Ingredients

5-6 servings
  1. 1.1 lbsmedium beans
  2. 1large onion, finely chopped
  3. 2-3carrots, sliced
  4. 3-4red bell peppers, sliced
  5. 3 clovesgarlic, finely chopped
  6. 1hot pepper or red pepper flakes (optional)
  7. 1/2 cupolive oil
  8. 1 teaspoonturmeric
  9. Freshly ground pepper
  10. 1/2 bunchparsley, finely chopped
  11. 1.1 lbsspinach (fresh or frozen)
  12. Salt
  13. Juice of 1 lemon
  14. --------------------------------------------------------
  15. For serving
  16. Lemon juice
  17. 1little oregano or thyme
  18. Finely chopped hot pepper or red pepper flakes (optional)

Cooking Instructions

    Soak the beans overnight in plenty of water. The next day, drain them and boil for 5 minutes. Drain and set aside.

    Heat half of the olive oil in a pot and sauté the onion. After 3-4 minutes, add the garlic, carrots, red bell peppers, hot pepper if using, turmeric, and stir for 2 minutes. Add the beans and 6 1/3 cups (1.5 liters) of water to the pot. Simmer until the beans are tender and the soup thickens.

    Then add the parsley, spinach, salt, and pepper, and let it boil for 3-4 minutes. Finally, add the lemon juice, turn off the heat, and let the soup rest for 10 minutes before serving.
