Lemony Bean Soup with Spinach and Turmeric

Lemony Bean Soup with Spinach and Turmeric

Cooking Instructions

Soak the beans overnight in plenty of water. The next day, drain them and boil for 5 minutes. Drain and set aside.

Heat half of the olive oil in a pot and sauté the onion. After 3-4 minutes, add the garlic, carrots, red bell peppers, hot pepper if using, turmeric, and stir for 2 minutes. Add the beans and 6 1/3 cups (1.5 liters) of water to the pot. Simmer until the beans are tender and the soup thickens.

Then add the parsley, spinach, salt, and pepper, and let it boil for 3-4 minutes. Finally, add the lemon juice, turn off the heat, and let the soup rest for 10 minutes before serving.

Serve with extra lemon juice, oregano or thyme, and finely chopped hot pepper.
