Ingredients

  1. 2 cupsbread flour or all-purpose flour as per availability
  2. 2 tablespoonsolive oil or melted butter
  3. 1 tablespoon + 1 tsp sugar
  4. 2 tspdry active yeast
  5. 1/2 cupwarm milk to dissolve yeast + 2 to 3 tablespoon for dough
  6. For Custard:
  7. 1 cupwhole milk
  8. 1/2 cupfresh cream
  9. 2 tablespoonscustard powder dissolved in 2 tablespoon of cold milk
  10. 1/2 cupsugar
  11. 4 dropsvanilla essence
  12. 1/4 cupChopped candied cherries
  13. 1 tablespoonmilk mixed with 1 teaspoon sugar to brush on top
  14. 1 tablespoonmelted butter to brush after baking

Cooking Instructions

    First, add yeast and 1 tablespoon sugar to 1/2 cup of warm milk. Stir well and keep for rising in a warm place.

    Then take the flour in a mixing bowl, add salt and the bloomed yeast mix. Then knead for 5 min to a pliable dough. Knead on the counter for 10 minutes in sprinkled flour by stretch and pull method. Then add 1 tsp sugar, olive oil and knead for 5 minutes.

    Then place the dough in an oil greased glass bowl covered with cling wrap for 2 hours to rise well.

    Then punch the air out of the dough and knead for 5 to 10 minutes. Then roll out a portion to a thick disc. Place a spoonful of custard and 1 tsp of cherries near one edge.

    Flip over and press well to give a half moon shape. Prepare more in a similar way from the rest of the dough.

    Arrange on a greased and lined baking tray, cover with a damp cloth and keep for final proofing for 1 hour.

    Then preheat oven to 180°c. Remove the cloth, brush the Calzone with warm sweetened milk on top for shine.Then sprinkle with chopped candied cherries on top and press well.

    Bake for 25 to 30 minutes. Remove when golden on top. Then brush the tops with melted butter and serve.

    To prepare Custard:
    Boil the milk and cream. Then stir in sugar and the prepared custard mixture. Stir cook to form a thick paste. Cook and refrigerate. Then use it when it's cold.
