Millet Pulao with Leek and Vegetables is a treat to our tastebuds. This is very much Indian except for the use of Leek. A super healthy comfort meal for the whole family. Not only is it healthy, it tastes absolutely delicious. With everyone's favourite Veggies and Leek for an excellent twist, it would be loved by all. Children as well as the adults both would enjoy it.
And regarding the soaking of Millets, it's highly recommended as soaking for at least half an hour removes Phytic acid present in them. And also makes it fluffier and tastier. As for the amount of water to be used for cooking them, use in 1:2 ratio for best results. For every one cup of Millet, use 2 cups of water. Instead of water, it can be cooked in Vegetable stock as well. Or use a seasoning cube instead. It's absolutely one's own choice.

Cooking Instructions

Soak barnyard millet after washing it thoroughly. Soak in enough drinking water for about 30-40 minutes for best results. Also add about 2 cups of water for every single cup of millet to cook. Cook until all the water dries up and it's perfectly done. It takes about 20-25 minutes in all.

Heat oil in a pot. Add cumin seeds along with asafoetida or hing. Next add chopped leek. Saute it for a minute and then add corn and the green peas.

Also add all the powdered spices too. Cook for a good 7-8 minutes. And finally add the well soaked and boiled millet. Mix well and top with some chopped coriander. Reserve some for the final garnish.

The Pulao is all done in about 4-5 minutes. It can also be pressure cooked if desired. Adjust salt. Garnish and serve it piping hot. Enjoy!

When marinated, it was exactly like tabbouleh! The salad is very tasty already with lemon juice and olive oil, but I added a little soy sauce.Cooking time of mixed grains: Kibi-mochi for 5 minutes, amaranth for 8 minutes and quinoa for 10 minutes.
