Cooking Instructions

Take all vegetable and washed it,also washed methi,green garlic and coriander and rinse it.

Take coriander leaves, methi and green garlic and chopped them.Peeled papadi, toor,green chana,give two cut to brinjal.

Take chopped methi,1/4 chopped green garlic,1 cup chopped coriander leaves, in this add 1.5 cup besan,1/2 cup rice flour, 1/2 cup wheat flour, 1 tablespoon goda masala,1 tablespoon red chilli powder, 1 tablespoon coriander seeds powder, 1/2 tablespoon termaric powder, 1 tablespoon sugar,1 tablespoon salt and make soft douge do not add water.Take douge and make small balls,Then in pan pour oil let it heat then add this small balls and fry up to brown.

Grate coconut and grind slietly in mixer.Take chopped coriander leaves and green garlic.In this add 2 tablespoon goda masala,2 tablespoon red chilli powder, 2 tablespoon coriander seeds powder, 2 tablespoon cumin seeds powder, 1 tablespoon termaric powder, 1 tablespoon garam masala,1 tablespoon salt mix it well and then add in cut brinjal like below and remaining Keep side as it is.

In other vegetable add 2 tablespoon goda masala,2 tablespoon red chilli powder, 2 tablespoon coriander seeds powder, 2 tablespoon cumin seeds powder, 1 tablespoon termaric powder, 1 tablespoon garam masala,1 tablespoon salt,1/2 tsp eating soda mix it well.

Take big utensil add 600 ml.oil after heated add chopped garlic, carom seeds, seasame seeds,asafoetida and then add stuffed brinjal in it cook for 5 min keeping lid on it.After this add all other vegetable above except kand,potato, sweet potato and methi mutaka.Cook this for 20 minutes keeping lid on it.Then add sweet potato, kand,potato and again cook for 10 min.Now add methi mutaka in it stir it well and cook this keeping napkin then lid on it fir 30/40 minutes.

Turn gas off after 10 minutes open the lid.Udhiyo is ready to served. Served it with bhakari,chapati or puri or you can it only Udhiyo.
