Lemon juice, fried nuts, aromatic herbs and spices combine perfectly to give this steamed rice an amazing spicy, tangy and nutty flavor. This vegan lemon rice recipe is sure to become one of your favorite rice dishes.
Cooking Instructions

First of all wash and soak the rice and cook it 80%. Prepare all the ingredients to make lemon rice.

Now heat ghee anf oil in a pan and fry the cashews and keep it aside. Then add mustard, cumin, gram dal,urad dal and dry red chillies and sizzle until brown.

Then add peanuts, curry leaves,chopped green chilli and saute everything. Now add turmeric powder and lemon juice.

Now add cooked rice and mix everything well. Sprinkle 1 tablespoon of water in it and cover with a lid and let it simmer for 2 to 3 minutes. Then add coriander leaves and cashews and mix it well and remove from heat.

Quick and easy to make lemon rice is ready. that can be served with curd and rasam.
