This recipe is dedicated to my mother who taught me not only to cook, but inculcated in me the true values of life . I remember that as a child , I was a very fussy eater . I would eat very few vegetables & only certain dals & play around with food . She would mix - match vegetables & dal & cook up lovely healthy parathas for me , which I remember happily gorging on . It is from her that I have learnt to cook up dishes that would entice my daughter to eat .

This pasta is one such dish that I have tried to make healthy by using semolina pasta, corn & red capsicum. It is a good take away dish for both children going to schools & office - goers . It keeps you full for a long time .

I am sure children will love this pasta . It is simple with no sauces yet yummy to the last bite .

Ingredients

10 minutes
1 serve
  1. 1 bowlcooked pasta (any variety) (Al Dante)
  2. 1 tspgarlic, chopped
  3. 2 tbspspring onion whites, chopped
  4. 2 tbspspring onion greens, chopped
  5. 2 tbspred capsicum, sliced
  6. 2 tspolive oil
  7. 1 tspdry chilli flakes
  8. 1/2 tspmixed herbs
  9. Salt to taste

Cooking Instructions

10 minutes
  1. 1

    Cut all the veggies.

  2. 2

    Heat olive oil in a pan. Add chopped garlic & saute for 1/ 2 a minute.Add spring onion whites & saute for 1 minute.

    Add spring onion greens & red capsicum. Saute for 1 minute.

  4. 4

    Add boiled corn & boiled pasta. Add chilli flakes & mixed herbs. Cook for 1 minute. Mix very well.

    Serve immediately.
