Ingredients

Total Time: 50 min (Prep: 15 min | Bake: 35 min)
Servings: 6–8 slices
  1. Wet:
  2. 2/3 cupOrganic Jaggery Powder
  3. 1/2 cupHot Water
  4. 1/4 cupOil
  5. 3 tbspMilk (add gradually)
  6. Dry:
  7. 1 cupMulti Millet Atta (Bajra, Ragi, Jowar, Wheat)
  8. 1 tspBaking Powder
  9. 1/4 tspBaking Soda
  10. Optional Add-ins & Toppings:
  11. 2 tbspeach: shaved almonds, walnuts, cashews
  12. 2 tbspCranberries
  13. 1 tbspGolden Raisins
  14. 2Whole Walnuts
  15. 1 tbspeach: Pumpkin, Sunflower, Watermelon Seeds
  16. 3 tbspFruit Peels

Cooking Instructions

Total Time: 50 min (Prep: 15 min | Bake: 35 min)

    Assemble Ingredients:
    Layout all dry and wet ingredients with toppings.

    Grease the Pan:
    Grease with ghee, line with parchment, grease again.

    Preheat Oven:
    180°C for 10 mins.

    Jaggery Mixture:
    Mix jaggery with hot water till dissolved.

    Sift & Combine Dry Ingredients:
    Sift flour, baking powder, and soda.

    Make Batter:
    Add flour mix to jaggery water gradually. Add oil. Whisk. Add milk gradually and whisk well.

    Add-ins:
    Fold in fruit peels, nuts, raisins, cranberries, and seeds.

    Fill the Pan:
    Pour into pan, tap to remove bubbles.

    Top It:
    Add reserved toppings: nuts, seeds, dried fruits.

    Bake:
    Bake for 35 mins or until a skewer comes out clean.

    Cool completely, unmould, slice.
