Bitter Gourd Green Mango Curry

Boil bitter gourd for at least 5mins till it becomes soft. Boil green mango slices for 5mins.

Discard water. Cut bitter gourd into half lengthwise and remove the hard seeds. Remove the skin of green mango. Cut into small pieces.

In a kadhai, add oil. When the oil becomes hot, add cumin and mustard seeds and allow them to flutter. Add bitter gourd slices into the hot oil and saute for 2mins with lid. Add mango slices and saute for 1min more. Add spices, mix well. Pour 3/4th cup water and cover the lid. Cook under medium flame for 4-5 minutes. Switch off the burner.

Transfer the curry into a serving bowl and serve with rice. This preparation will reduce the bitterness of bitter gourd.
