Spaghetti and chiballs with an Indian twist

Another week.. sister came home for the weekend (she stays at boarding). We went out for dinner on Saturday night. My sister is crazy about noodles. Whenever she orders food its only veg noodles....I am sick and tired of her ordering the same thing again and again. this Saturday was the same story.. she and her dear noodles.. But I was adamant this time... she has to try something new.. so i made a deal. The deal: I will cook her spaghetti on Sunday. So, this Sunday I thought of making spaghetti and meatballs.. although I changed the authentic recipe. Firstly, i replaced meat with chicken(since we do not have meat due to health issues) and secondly, basil with kasuri methi and coriander, oh! the aroma(basil was not available). Therefore, I am presenting _Spaghetti and chiballs_ with an Indian twist. I also made some soyballs (the same way as the chiballs) as my sister is a pescetarian. The recipe was boom!!!! Everyone loved it especially the sister. Hope you all will try it. Relax and Enjoy.......

Cooking Instructions
- 1
Chop the coriander leaves finely. Keep aside. Dry roast the kasuri methi leaves. Again keep aside.
- 2
Wrap the cream cracker in a tea towel and bash it until fine bits form.
- 3
In a large bowl mix together chicken minced, cream cracker bits, chopped coriander leaves, oregano, egg, salt, black pepper, dijon mustard and red chilli sauce. Mix well into a dough type consistency. Divide into 6-7 balls.
- 4
Drizzle olive oil over the balls and shake them so that all get coated. Freeze for 10 minutes.
- 5
Chop onion and garlic finely. Heat oil in a wok and fry the onions till golden.
- 6
Shallow fry the chiballs on high flame for 3 minutes till brown on the outside then cook for another 5 minutes till done.
- 7
Meanwhile put a large pan of salted water to boil. Add the spaghetti and cook as instructed on the package.
- 8
Add garlic, tomato puree and balsamic vinegar. Season well. Add the roasted kasuri methi leaves along with the red chilli sauce. Bring to a boil.
- 9
Drain the spaghetti.
- 10
Add sauce to the spaghetti and chiballs. Lightly mix all with a spaghetti tong.
- 11
Serve hot with parmesan cheese and coriander leaves sprinkled on top.

Our little one was feeling a little under-the-weather today, so I made her one of her favourites for dinner: spaghetti without any yucky, sneaky vegetables. Just noodles and rich, tomatoey, slightly sweet, beefy sauce. We'll get back to healthy eating tomorrow. Robert Gonzal -

An Asian Woman and her Spaghetti Sauce An Asian Woman and her Spaghetti Sauce
Last month, with the grocery program came 2 cans of Del Monte spaghetti sauce. I want to use them up. Know nothing about how spaghetti sauce supposed to taste, but know exactly how I want my spaghetti sauce to taste like. I want some saltiness in every bites to offset the sourness and sweetness of the sauce. I am not very fond of olives so I used capers. I also used blanched broccoli because I want something green to bring out the red color of the sauce. And because my husband is Korean, we need some heat. Thus, red pepper flakes are a must. We like pork more than beef, so using up some leftover bacons is unavoidable. There is an old saying in Vietnamese: deaf people are not afraid of gunshots. I am “deaf” right now. I am going to cook spaghetti sauce my ways.Massimo Battura can grind his teeth, pull his hair, and clench his fists. Here I come. 2choi -

Spaghetti Spaghetti
Once when working at the shipyard a co-worker brought a dish in similar to this I add the Herbs and spices to it. His was spaghetti and cheese. It's definitely a vegetarian dish but don't let the lack of sauce deter you its simple, fast, but delicious. Also good with leftover spaghetti noodles. skunkmonkey101 -
