Butter biscuits are very nostalgic to me, drives me back to childhood... in bangalore you would go to any bakery mostly iyengar bakery and ask them for benne biscuit (butter biscuit) they would have two varieties sweet and salt, I would always prefer the sweet one....
and since baking bug bit me, I've always been wanting to try something like that..
Shortbread cookies have the same taste, but I have altered the proportions to give it more buttery taste and crumbly texture.
Its just 3 ingredients off your pantry shelf and your done.
You can make the dough ahead put it in the freezer thaw it, cut and bake it.

Ingredients

  1. 3/4 cupbutter
  2. 1 cupflour
  3. 1/4 + 2 cup tbspssugar castor or fine granulated
  4. 1 tspvanilla extract

Cooking Instructions

    Cream sugar and butter until well blended

  2. 2

    Add vanilla and flour.

  3. 3

    Blend until it forms a lump.

  4. 4

    Then work with hands to form a dough.

    Wrap a cling foil, place in the refrigerator for a minimum 30 mins.

    Preheat the oven at 190°C/350°F/gas mark 4

  7. 7

    Take the dough out, roll out the dough to 1/4 '' thickness on a silicon mat or a smooth surface

  8. 8

    Cut using a cookie cutter

  9. 9

    Place on a parchment sheet on a sheet pan or cookie pan, bake for 12 mins or until it slightly brown

  10. 10

    Let it cool completely on a wire rack
