  2. 1egg white
  3. 1 lbcream cheese
  4. 8 ozcottage cheese
  5. 3eggs
  6. 1/2 cupsugar
  7. 1 tablespoonlemon juice

    Preheat oven to 160C/325F. Crush cookies to fine crumbs. Lightly beat egg white with 1 tablespoon water and mix into cookie crumbs.

    Line the bottom of a 20cm/8 inch spring form pan with baking paper. Press crumb mixture into the base.

    Soften cream cheese. Beat cream cheese, cottage cheese, eggs, sugar, lemon juice and lemon zest together until combined.

    Pour into pan. Bake for 55 to 60 minutes or until set.
